[llvm-c] Avoid deprecated APIs in tests

Avoid the use of deprecated (opaque pointer incompatible) APIs
in C API tests, in preparation for header deprecation. Add a
LLVMGetGEPSourceElementType() to cover a bit of functionality
that is necessary for the echo test.
