[llvm-cov] Clean up an awkward capture-by-reference (NFC)

Writing `for (StringRef &SourceFile : ...)` is strange to begin with.
Subsequently capturing "SourceFile" by reference is even stranger. Just
copy the StringRef, since that's cheap to do.
