[Sanitizer] Cleanup {ASAN, MSAN}_INTERCEPT_FUNC[_VER] macro

Note that this change is not strictly NFC since we add the
`(&(name) != &WRAP(name)` part to the conditional for the `_VER` variant
of the macro.
