[CMake] Include ZLIB_ROOT in LLVMConfig.cmake 

Include the value of `ZLIB_ROOT` in `LLVMConfig.cmake` so `FindZLIB` can pick it up. This fixes an issue where ZLIB is not found on AIX runtimes despite specifying `-DZLIB_ROOT`.
